Apple Gouda Quesadilla

2016 was a great year for us: we moved, Charlie started Kindergarten, and Owen started Preschool. 2017 is going to be even bigger as we’re making some life changes around here. This year, we’re working on living a better life. I realize that sounds like everyone’s goal, right? Like, who doesn’t want to live a better life? What I mean by that is that this year I plan on being more organized, making better use of our free time, eating better, and exercising more.
In Maryland, January is usually the first month that it’s especially cold. And what’s better during the cold months than soup? I picked up Progresso Light Chicken Noodle soup at Walmart, which gives me a delicious soup to serve the family, but it’s not going to de-rail my quest for a healthier start to 2017! I love that Progresso Light Chicken Noodle Soup uses real, quality ingredients including antibiotic free, all white meat chicken.
You all know I’m all about the quick and easy around here, especially at dinner time! As a busy mom of two starving boys, I need to be able to get dinner on the table without a lot of fuss.
The thing is though, I can’t serve my husband a bowl of soup and call it dinner. Honestly, the kids probably wouldn’t go for it either. I made a quick Apple Gouda Quesadilla to serve alongside our soup. I love the idea of grilled cheese, but we don’t need all that bread, delicious as it may be.
- 4 flour tortilla (we used wheat)
- 8 Smoked Gouda slices
- 2 apples, thinly sliced (pick your favorite, we used Gala)
- honey mustard (optional)
- cooking spray
- Heat large skillet over medium-high.
- Spray skillet to coat.
- Place one tortilla in skillet.
- Spread honey mustard on tortilla.
- Place two slices of cheese on half of the tortilla.
- Top cheese slices with about half an apple worth of apple slices.
- Fold tortilla in half.
- Flip to heat evenly. (about 1-2 minutes)
- Cut into 4 triangles.
