We don’t have to deal with packing lunches for school yet, but this year I’ll be picking Charlie up from Preschool just in time to get home for lunch. Whether you’re packing lunches for the kids to take to school or just looking for a quick and easy lunch to make at home, I think you’ll enjoy this recipe from eMeals.

Peanut-Butter-and-Jelly-Banana-Lunch-Kid-Friendly

Back to School Healthy Lunch Recipe: PB&J Banana Dogs

Ingredients

  • ½ cup natural peanut or almond butter
  • 4 hot dog buns
  • ¼ cup strawberry jam or jelly
  • 4 small bananas

Instructions

  1. Spread 2 tablespoons nut butter inside each hot dog bun.
  2. Place 1 banana inside each bun, and top with jam.
  3. Wrap in plastic wrap.

    I wonder how well these will hold up in a lunchbox. I suppose if you put it in a airtight container with an ice pack it should stay cool enough.
