The Best Slow Cooker Beef Roast

- 2-3 lb beef chuck roast
- 1 yellow onion, quartered
- 1 .7 oz dry packet Italian dressing mix
- 1 10 oz container beef broth
- salt and pepper
- (optional) carrots
- Place carrots (if using them) in bottom of slow cooker.
- Add beef roast on top of carrots.
- Spread onion pieces around beef roast.
- Pour beef broth over the meat.
- Sprinkle Italian dressing mix, salt, and pepper over the roast.
- Cook on low for 6-8 hours.
