We still have a little over a month until school begins here in Maryland (we go back after Labor Day this year), but we have received our class assignments and school supply lists! Of course, that means we’re spending time at Walmart making sure we have everything we need for another exciting (and busy) school year!
And while we’re thinking about all those back-to-school routines, supplies, and schedules – I’m also thinking about easy weeknight meals! Between scouts, soccer, school, and work things are going to get crazy come the fall. I need those quick and easy meals to get dinner on the table without the fuss.
Today I want to share a super simple weeknight dinner – Chicken Taco Cups!
Whether you’re having “Taco Tuesday” or just need something super easy, these Chicken Taco Cups a fun spin on a classic fave!
To speed up dinner, I started with quality ingredients that were ready for me to us! While at Walmart, I grabbed a few cans of Swanson® Premium Chicken because not only is the chicken already cooked and ready to use, but it’s low fat and heart healthy!
And if you’re eating tacos, you always need salsa! I love the Pace® Chunky Salsa for it’s genuine southwest flavor and the fact that it’s made with handpicked vegetables. I usually go for Mild, but if you want to kick up the heat there are several varieties of textures and heat levels.
We also picked up a couple of bottles of V8 Splash®. The boys love the variety of the flavor blends and I love that it’s a choice I can feel good about because it’s made with real fruit and vegetables! We’ll just call that a Mom win! Did I mention it’s deliciously fruity?
Now, about those Chicken Taco Cups! I used wonton wrappers for our cups. I find them near the tofu in the refrigerated section of produce.
Coat your muffin tin with some cooking spray and place two wonton wrappers in each muffin cup.
Add refried beans to the cups.
In a large bowl, combine Swanson® Premium Chicken, taco seasoning, and salsa.
Fill the cups to the top with the chicken taco mixture.
Top with cheese and pop them in the oven!
When you’re ready to eat, add some sour cream and maybe a little extra salsa!
We served with some southwest rice and corn for a complete meal.
- 12 Wonton Wrappers
- ½ cup refried beans
- 1 can (12.5 oz) Swanson® Premium Chicken
- ½ cup Pace® Chunky Salsa
- 2 tsp dry taco seasoning
- ¾ cup shredded cheese
- (optional) sour cream to top
- Preheat oven to 375 F.
- Coat your muffin tin with some cooking spray and place two wonton wrappers in each muffin cup.
- Add a teaspoon or two of refried beans to the cups.
- In a large bowl, combine Swanson® Premium Chicken, taco seasoning, and salsa.
- Fill the cups to the top with the chicken taco mixture.
- Top with cheese.
- Bake for about 12-15 minutes until wonton wrappers are slightly browned.
- When you're ready to eat, add some sour cream and maybe a little extra salsa!

Even in the rush of everything that comes with the new school year, sitting down to a family dinner each night is super important to me. I hope that you never think our dishes are too fancy for you to make! These are pretty, but definitely not complicated! We’re all about the easy, family-pleasing meals!
