Chicks in a Blanket with Apricot Sauce

  • ½ cup apricot preserves
  • ¼ cup honey
  • 3 tablespoons of mustard
  • ¼ teaspoon of white vinegar
  • ½ cup of mozzarella cheese
  • 1 box of pastry dough (pie dough)
  • 8 chicken sausage links, fully cooked
  1. Preheat oven to 375 degrees.
  2. In a bowl mix together the apricot, honey, mustard and vinegar.
  3. Take the pastry dough and gently roll it out. Cut into 8 even pieces. (4 per roll, box should have 2 pie rolls.)
  4. Spoon on 2 tablespoons of sauce mixture, gently spread it on a piece of pastry.
  5. Cut a lengthwise line in sausages and fill with two teaspoons of cheese.
  6. Place one sausage over the dough and jelly mixture, fold dough over, like a crescent.
  7. Gently brush extra sauce over each chick in a blanket.
  8. Place sausages on baking pan. Bake for 17-20 minutes until dough is golden.
