Chicks in a Blanket with Apricot Sauce

- ½ cup apricot preserves
- ¼ cup honey
- 3 tablespoons of mustard
- ¼ teaspoon of white vinegar
- ½ cup of mozzarella cheese
- 1 box of pastry dough (pie dough)
- 8 chicken sausage links, fully cooked
- Preheat oven to 375 degrees.
- In a bowl mix together the apricot, honey, mustard and vinegar.
- Take the pastry dough and gently roll it out. Cut into 8 even pieces. (4 per roll, box should have 2 pie rolls.)
- Spoon on 2 tablespoons of sauce mixture, gently spread it on a piece of pastry.
- Cut a lengthwise line in sausages and fill with two teaspoons of cheese.
- Place one sausage over the dough and jelly mixture, fold dough over, like a crescent.
- Gently brush extra sauce over each chick in a blanket.
- Place sausages on baking pan. Bake for 17-20 minutes until dough is golden.
