Tortilla-Crusted Pork

- Smithfield Marinated Slow Smoked Mesquite Flavor Fresh Pork Loin Filet
- 2 cups crushed tortilla chips
- 1 egg
- 1 cup flour
- Preheat oven to 375 F.
- Slice pork loin filet into about 1 inch thick slices.
- Place tortilla chips, flour, and egg into separate shallow bowls.
- Line baking sheet with foil and coat with cooking spray.
- Coat sliced pork in flour.
- Then dip into egg.
- Coat in crushed tortilla chips.
- Place on baking sheet.
- Bake 15 minutes and then flip to finish baking an additional 15 minutes.
