Ham & Cheese Noodle Skillet

Ingredients
  • 2 Tbsp butter
  • ½ onion, diced
  • 1¾ cups low-sodium chicken broth
  • 1 cup half and half
  • 6 oz No Yolks noodles
  • ~1 pound cooked ham, chunked
  • 2 cups shredded cheese (just about any mix will do)
  • 1 cup frozen peas
  • salt and pepper
Instructions
  1. Melt butter in a large skillet over medium-high heat.
  2. Cook onions until translucent, about 5 mins.
  3. Add ham, broth, half-and-half, and noodles to skillet and bring to a boil.
  4. Cover, reduce heat to medium-low, and simmer until noodles are tender, about 8-10 minutes.
  5. Add in cheese and stir to combine.
  6. Add peas to skillet and cook until heated through, just a few minutes.
  7. Salt and pepper to taste.
  8. Top with fresh parsley and parmesan.
