Ham & Cheese Noodle Skillet

- 2 Tbsp butter
- ½ onion, diced
- 1¾ cups low-sodium chicken broth
- 1 cup half and half
- 6 oz No Yolks noodles
- ~1 pound cooked ham, chunked
- 2 cups shredded cheese (just about any mix will do)
- 1 cup frozen peas
- salt and pepper
- Melt butter in a large skillet over medium-high heat.
- Cook onions until translucent, about 5 mins.
- Add ham, broth, half-and-half, and noodles to skillet and bring to a boil.
- Cover, reduce heat to medium-low, and simmer until noodles are tender, about 8-10 minutes.
- Add in cheese and stir to combine.
- Add peas to skillet and cook until heated through, just a few minutes.
- Salt and pepper to taste.
- Top with fresh parsley and parmesan.
