Freezer Breakfast Sandwiches

- 12 eggs
- 12 slices of cheese
- 12 (thin bagels or english muffins)
- 1 cup bell pepper, diced
- 1 small onion, diced
- ½ cup chopped spinach
- 12 slices canadian bacon (ham)
- salt and pepper
- Preheat oven to 350 F.
- Scramble eggs and pour into 11 x 15 (or similar size) baking sheet.
- Sprinkle peppers, onion, spinach, salt and pepper evenly over eggs.
- Bake about 18 minutes, until eggs are just set.
- Allow eggs to cool.
- Using a knife or pizza cutter, slice into 12 even pieces.
- Assemble sandwiches with canadian bacon, baked egg slice, and cheese.
- Wrap sandwiches individually in parchment paper and store in freezer bag in the freezer.
- To heat, remove frozen sandwich from parchment paper and wrap in paper towel.
- Heat on high in microwave for ~2 min.
