The Slow Cooker Meatloaf is perfect for a busy weeknight dinner. Don't forget the mashed potatoes!

Ingredients
1½ pounds ground beef
1 envelope dry onion soup mix
1 box dried stuffing mix (savory herb flavor is my fave, but any will work)
1 cup water
⅓ cup barbecue sauce
2 large eggs
1 tsp salt
1 tsp pepper
Instructions
Line slow cooker with heavy duty aluminum foil and lightly coat with cooking spray.
Using your hands, combine all ingredients in large mixing bowl.
Shape into oval-like loaf and place in foil-lined slow cooker.
Cook on low for 6-7 hours.
Notes
I don't do any BBQ or glaze on top, but if that's your thing, you can do a glaze on top during cooking and finish off with a little more before serving.
