Spam, Taters and Eggs

This is definitely a comfort food breakfast that works great as a breakfast for dinner meal.

Ingredients
  • ½ can of Original SPAM
  • 1 large potato
  • 6 eggs
  • 1 small onion
  • pepper
  • 1 Tbsp vegetable oil
Instructions
  1. Heat oil skillet over medium-high.
  2. Dice potato into small cubes and add to skillet.
  3. Cover and cook about 5 minutes.
  4. While potatoes are cooking, dice SPAM into same size cubes as potatoes.
  5. Turn down to medium heat.
  6. Add to skillet.
  7. Dice onion and add to skillet.
  8. Keep covered and cook until onions are soft and SPAM has slight browning. (about 5 minutes)
  9. Add pepper as desired.
  10. Shift everything to one side.
  11. In a separate bowl, beat eggs then add to empty side of skillet.
  12. As eggs start to cook, combine everything together.
Notes
This works great in an electric skillet.
