Author: Christina Shirley
Recipe type: Cookies
- 1½ Sticks butter
- ⅔ Cup Sugar
- 1 Large Egg
- 1 Teaspoon Vanilla
- 1¾ Cups Flour
- ½ Teaspoon Baking Powder
- ½ Teaspoon Salt
- Sugar crystals or sprinkles for coating
- Orange and Black decorator gel or food coloring
- ½ Cup Powdered Sugar
- 1 Teaspoon Milk
- ¼ Teaspoon Vanilla
- Preheat the oven to 375
- In a large bowl using an electric mixer, beat the butter, sugar, egg and vanilla until creamy.
- Fold in flour, baking powder and salt until a soft dough forms.
- Roll dough into 1-2 inch balls and coat with sugar crystals.
- Place on a cookie sheet and press down in the middle creating a "thumbprint".
- Lightly pinch two together to create the snowman body. (Refer to photo)
- Bake for 6-8 minutes or until golden brown.
- NOTE* I always check my thumbprint cookies halfway through their baking time. Sometimes they need to be pressed down in the middle again.
- Remove from the oven and let cool.
- Mix the powdered sugar, milk and vanilla in a small dish until smooth.
- Icing should be thin enough to pour, but not runny. You may need to add a touch of milk or powdered sugar to get it just right.
- Fill each thumbprint and give a gentle shake to level out the icing.
- Let set until firm, you can refrigerate for about 10 minutes to speed this process.
- Use decorator gel to create a nose and mouth!
