Gingerbread Cookies and Cream Bars

- about 3 cups of chopped or ground gingerbread cookies
- 5 cups marshmallows
- 4 Tbsp butter
- Place cookies in food processor and pulse until ground to your liking. Large chunks are fine.
- In a microwave safe dish, melt marshmallows and butter in microwave about 2 minutes. They'll be puffy when you remove them from the microwave.
- Add your ground cookie crumbs and stir to combine.
- Pour mixture to a foil-lined 8×8 inch pan and allow to sit for about 10 minutes.
- Cut bars into 12 rectangles.
