Gingerbread Cookies and Cream Bars

Ingredients
  • about 3 cups of chopped or ground gingerbread cookies
  • 5 cups marshmallows
  • 4 Tbsp butter
Instructions
  1. Place cookies in food processor and pulse until ground to your liking. Large chunks are fine.
  2. In a microwave safe dish, melt marshmallows and butter in microwave about 2 minutes. They'll be puffy when you remove them from the microwave.
  3. Add your ground cookie crumbs and stir to combine.
  4. Pour mixture to a foil-lined 8×8 inch pan and allow to sit for about 10 minutes.
  5. Cut bars into 12 rectangles.
