Kid-Approved Tuna Sushi

- 1 (5 oz) can Bumble BeeĀ® Solid White Albacore Tuna in Water
- 1 small cucumber, thinly sliced
- 1 whole carrot, thinly sliced
- soy wrappers
- 2 cups white rice
- 1½ cups Cold water
- 4 Tbsp Rice vinegar
- 3 Tbsp sugar
- 1 tsp Salt
- Rinse rice until water runs clear.
- Add rice to a large non-stick pot, then add 1½ cups of cold water.
- Let the rice sit in the water for about 30 minutes. This lets the rice absorb some of the water before cooking.
- Bring to a boil.
- Cover and turn to low for 15 minutes.
- When rice is down, remove from heat and let sit for 10 minutes.
- While waiting for rice to cook, combine the vinegar, sugar and salt in a small bowl.
- Place rice into large bowl and pour vinegar mixture over it.
- Combine, but be careful not to mush. You want each piece to get the vinegar.
- Place thin layer of rice on top of soy wrapper.
- About ¾ of the way down, place a row of sliced carrots and cucumbers.
- Top with albacore tuna chunks.
- Roll up wrap, starting at the bottom.
- Slice into even slices.
