Chocolate Blackberry Cheesecake Parfait

  • ½ package chocolate sandwich cookies, crushed
  • 1 Tbsp butter, melted
  • 6 ounces fresh blackberries
  • 2 Tbsp powdered sugar
  • 1 tsp lemon juice
  • 8 ounces cream cheese, room temperature
  • 3 ounces white chocolate, chopped
  • 1 (12 oz) tub frozen whipped topping, thawed
  1. Combine crushed cookies and melted butter in a small bowl.
  2. Pack a spoonful into the bottom of your serving dishes. (I used plastic water glasses from the dollar store.)
  3. Combine blackberries, powdered sugar and lemon juice in a small saucepan.
  4. Stir over low heat about 10 minutes and berries have collapsed.
  5. Strain if you'd like (I don't) and allow to cool.
  6. Heat the white chocolate in the microwave, stirring every 20 seconds until fully melted.
  7. Add cream cheese and beat until well combined.
  8. Fold in thawed whipped topping.
  9. Add cream cheese mixture to blackberry sauce and mix until well combined.
  10. You can spoon layers of cheesecake mixture into dishes or use a pastry bag and a star tip to make it pretty.
  11. Alternate layers with cookie crumbs.
  12. Top with whole blackberries or cookies.
