Chocolate Blackberry Cheesecake Parfait

- ½ package chocolate sandwich cookies, crushed
- 1 Tbsp butter, melted
- 6 ounces fresh blackberries
- 2 Tbsp powdered sugar
- 1 tsp lemon juice
- 8 ounces cream cheese, room temperature
- 3 ounces white chocolate, chopped
- 1 (12 oz) tub frozen whipped topping, thawed
- Combine crushed cookies and melted butter in a small bowl.
- Pack a spoonful into the bottom of your serving dishes. (I used plastic water glasses from the dollar store.)
- Combine blackberries, powdered sugar and lemon juice in a small saucepan.
- Stir over low heat about 10 minutes and berries have collapsed.
- Strain if you'd like (I don't) and allow to cool.
- Heat the white chocolate in the microwave, stirring every 20 seconds until fully melted.
- Add cream cheese and beat until well combined.
- Fold in thawed whipped topping.
- Add cream cheese mixture to blackberry sauce and mix until well combined.
- You can spoon layers of cheesecake mixture into dishes or use a pastry bag and a star tip to make it pretty.
- Alternate layers with cookie crumbs.
- Top with whole blackberries or cookies.
