5 Meals that Use Leftover Rotisserie Chicken

I love cooking for my family. That said, this whole three or four meals and a million snacks a day has gotten a bit old. We’ve really tried to get better about our grocery budgets and making better use of what we have already in the house. Like many of you, I’m trying to stretch out the time between our grocery store trips. This means we really have to meal plan and get things that can be used in many different ways.

One way we keep our grocery budget in check is by purchasing store brands at our favorite grocery stores, like ACME Markets. The Signature Family of Brands including Signature SELECT™, Signature Farms®, and Signature Cafe® lets us purchase high-quality everyday products at a reasonable price.

While I do really enjoy cooking, I’m over it and need a break sometimes.

One of my favorite things to grab on grocery shopping days is a rotisserie chicken. Signature Café® provides fresh chef-inspired meal solutions that are ready to eat or ready to heat. For a super simple dinner in the middle of the chaos, pick up a Signature Cafe Whole Roasted Chicken, a package of Signature Cafe Macaroni and Cheese, and a veggie.

Even with our family of four (including two growing boys), we always have some leftover rotisserie chicken. Of course, I’ve been known to pick up a second rotisserie chicken because extra leftovers is always a good idea!

5 Ways to Use Leftover Rotisserie Chicken

There are so many ways we can use leftover rotisserie chicken throughout the week! All of these recipes (if we’re even calling them that) require very little effort and can be ready in under 15 minutes.

Chicken Salad

Who doesn’t love chicken salad? It’s a great way to use up some leftover chicken. You can have a yummy sandwich or scoop some onto a salad for lunch or a cool dinner on a warm night.

Mix together 2 cups of chopped chicken, 1/2 cup of mayo, and some salt and pepper. You can add in diced celery or onion if you have that. We always use Old Bay in our house, but I know that’s not a staple for those not in Maryland.

BBQ Chicken Stuffed Baked Potato

We love switching up dinner by making a meal out of a baked potato.

Toss 1 1/2 cups of your favorite BBQ sauce with 2 cups of shredded chicken. Heat this up on the stove (or in the microwave) and serve over baked potatoes. Top with sour cream and shredded cheese.

Chicken Wraps

Set up a make-your-own wrap station with leftover chicken! Put out some tortillas, cheese, a few kinds of dressings or sauces, diced tomatoes, lettuce, and any other toppings your family may like on their wraps.

Burrito Bowls

Burrito bowls make for a delicious and filling meal!

Heat up your leftover rotisserie chicken and serve it over rice. Add corn, black beans, salsa, cheese, and a little sour cream!

Chicken Alfredo Pasta

Pasta is always a hit for dinner at our house.

Grab some Fettucine noodles at the store or use whatever you have on hand. Cook your pasta, heat up your jar of alfredo sauce with the chicken, and sprinkle some parmesan cheese on top. Toss in some cooked broccoli and serve with some Italian bread and a salad for a complete meal.

I shopped at ACME Markets, but you can also find these products at the Albertsons Companies family of stores, including Albertsons, Safeway, Jewel-Osco, Randalls, Shaw’s Supermarket, Star Market, Tom Thumb, and Vons.
