Freezer Breakfast Sandwiches

How do your mornings go? Tom gets up and gets the kids squared away in the mornings. He makes himself a cup of coffee and feeds them all breakfast. I know… I’m lucky. Even though I’m not the one making the breakfast in the morning, I definitely do my part ahead of time! Today I’m super excited to share our freezer breakfast sandwiches. They help speed up our mornings, while ensuring everyone has a breakfast of sustenance.

As a work-at-home parent, I get to take my time in the mornings. Of course, Owen has preschool three days a week at our church, a little over twenty minutes from our house. So my morning routine isn’t quite as laid back as I’d like to pretend it is.

I’ve been getting back into couponing – it’s a great way to save some money on things we use anyway. Coffee is one of those things I always try to have a coupon for.

Right now (starting 3/18/18), there’s a $1 digital coupon for Café Bustelo® Coffee at ShopRite. I love using the digital coupons because it requires no clipping and remembering to bring them to the store – the coupons are loaded right to my Price Plus club card!

I found my Café Bustelo at my ShopRite in Newark, DE, but you can look for Café Bustelo at your local ShopRite store!

We use K-Cups, but you can use the $1 Café Bustelo® Coffee coupon on any of the variety of forms at Shop Rite – K-Cups, ground coffee, and brick coffee.

Now… about those breakfast sandwiches to stock your freezer.

I was able to make 12 breakfast sandwiches in just about 30 minutes. That’s a huge win for me!

Not only is it super convenient to have them in the freezer, ready whenever we need one, but it’s very easy on the budget. Tom can make his coffee at home and grab a breakfast sandwich from the freezer instead of swinging through the drive-thru on his way to work.

I added veggies to our eggs before I baked them because I pretty much add peppers and onions to everything, but we could also use the extra veggies in the morning. If veggies aren’t your thing, you could skip it – but I promise it’s delicious with them!

These breakfast sandwiches can be made ahead and stored in the freezer for a quick breakfast.

Ingredients
  • 12 eggs
  • 12 slices of cheese
  • 12 (thin bagels or english muffins)
  • 1 cup bell pepper, diced
  • 1 small onion, diced
  • ½ cup chopped spinach
  • 12 slices canadian bacon (ham)
  • salt and pepper
Instructions
  1. Preheat oven to 350 F.
  2. Scramble eggs and pour into 11 x 15 (or similar size) baking sheet.
  3. Sprinkle peppers, onion, spinach, salt and pepper evenly over eggs.
  4. Bake about 18 minutes, until eggs are just set.
  5. Allow eggs to cool.
  6. Using a knife or pizza cutter, slice into 12 even pieces.
  7. Assemble sandwiches with canadian bacon, baked egg slice, and cheese.
  8. Wrap sandwiches individually in parchment paper and store in freezer bag in the freezer.
  9. To heat, remove frozen sandwich from parchment paper and wrap in paper towel.
  10. Heat on high in microwave for ~2 min.

Having a great breakfast is the key to a great morning around here. Thanks to Café Bustelo and our freezer breakfast sandwiches, we’re able to grab a great breakfast (even while we’re on the run) and start our mornings off on the right foot.
