I’d love to tell you the kids are back to school this week after our winter holiday break, but we got hit with the snow storm here on the east coast and the kids only had two days of school before having another four-day weekend. When school starts back, we need to switch things up with our lunch box because things had gotten pretty bland before break. We’ve actually been making mini waffle PB & J sandwiches for quite awhile, but we decided to make kabobs with them and add some of our favorite fruit!

I’ve told you numerous times how big of a staple peanut butter and jelly are around our house. When I was pregnant with Charlie, I ate at least one PB & J Sandwich a day because it was one of the few things I could actually stomach. It’s no surprise the kids love it on just about anything.

My new favorite thing to do is hit the grocery store late at night. It’s all about sneaking in a little me-time, right? I spent about two hours last week just wandering around ShopRite taking all the time I wanted while getting my groceries. I made sure to grab some Smucker’s® Squeeze™ Reduced Sugar Strawberry Fruit Spread and Jif® Natural Crunchy Peanut Butter. I always opt for strawberry, which is my personal favorite. The kids will eat strawberry or grape.

Smucker’s has the perfect touch of sweetness because it’s made with real fruit and Jif has that awesome fresh roasted peanut taste!

Whenever I see a good deal, I make sure to stock up. Right now, there’s an Ibotta coupon to save $.50 off each individual product, plus a $1 bonus if you buy both! This offer is good from 12/31/2017-2/3/3018.

The boys love helping in the kitchen, so what better way than to help make a yummy lunch? The great thing about this “recipe” is that it’s not really a recipe at all. That means there’s not a wrong way to do it – perfect for kids that want to help in the kitchen.

We keep it simple with frozen mini waffles, but if you want to make your own – go for it!

Kids can use a butter knife to spread the peanut butter on one waffle.

Squeeze a bit of fruit spread onto another waffle.

Then just sandwich them together!

To make the Pb & J Waffle Sandwich Kabobs with Fruit, have the kids alternate a sandwich with fruit. We did 2 mini waffle sandwiches with 2 or 3 pieces of fruit. We found that strawberries and pineapple worked best for us. You can half wooden kabob skewers if you want, but we used mini treat sticks and they worked great!

What are some of your favorite things to create with peanut butter and jelly?
