Sausage & Veggie Taters Foil Packet Meal

It's officially fall! Of course, it doesn't feel like fall here this week with temps hitting 90, but it'll feel like fall soon enough. One of my favorite things about fall is camping, bonfires, and all the food the goes with it. Foil packet meals are always great for camping or just enjoying an easy dinner in the backyard with the bonfire. 

We've been having weekly bonfires in the backyard lately. That means we're roasting hot dogs, cooking up beans in the iron skillet, roasting marshmallows, and throwing together foil packet dinners. Foil packet meals are so quick and easy. 

Foil packet meals can also be called hobo meals or hobo dinners. They require no dishes to cook and no plates to eat from. Just grab the heavy duty aluminum foil and you're all set! 

Basically, you can throw whatever you want in some tin foil and cook it over hot coals.

They have no artificial flavors and are made with real vegetables, making it a great way to get in some extra veggies for the entire family. There are a few varieties to choose from, so I know you'll be able to find something that appeals to your family. We tried McCain® Potato, Broccoli & Cheddar Veggie Taters™ and McCain® Potato & Cauliflower Veggie Taters™.  

When cooking foil packets over a campfire, it's always a guessing game if things are cooked through. We don't want to serve raw food! What's really nice about this foil packet recipe is that everything is already cooked. You're just heating it up. 

I've found that people like things a little charred to really feel like they cooked dinner over the fire. I'd check the kids' packets a little earlier though to prevent any possible complaints about “burnt” parts. 

Campfire meals are often packed with meats or sweets (who doesn't love a s'more?). Vegetables are often left out on those camping trips. McCain© Veggie Taters™ is a “better than” option to traditional tater tots, packed with flavor and veggies! 

Of course, they're great for appetizers, side dishes, and snacks!

Let everyone put together their own foil packet exactly how they'd like. Load them up with sausage, carrots, onions, McCain® Veggie Taters™, and a little extra cheese!

Ingredients
  • McCain® Veggie Taters™
  • ~1 lb pre-cooked sausage roped, sliced
  • 1 lb baby carrots
  • 1 onion
  • salt and pepper to taste
  • shredded cheese (optional)
Instructions
  1. Build a nice fire and then let it burn down to coals.
  2. Coat a large sheet of heavy duty foil with cooking spray.
  3. Add ingredients to foil packets.
  4. Fold foil packet making sure nothing can fall out.
  5. Heat over hot coals for about 10 minutes, flipping halfway through.
Notes
I mixed the onions and carrots in a bowl and tossed with salt and pepper. This made it even easier for everyone to just grab some and put on their foil piece.

Can I cook foil packets in the oven?

You can absolutely cook these foil packet dinners in the oven. 

Preheat the oven to 400 F. 

Place foil packets on baking sheet and bake 12-15 minutes.
