Happy Tuesday! Tuesdays are always better than Mondays, right? Well, this week that’s definitely true because I’m sharing a super simple, ready in under five minutes, coffee cake mug cake recipe! Did I mention it’s delicious?!?
My husband is the real coffee drinker in our house. I try to make sure we always have plenty of his favorite coffee, Folgers® K-Cup® Pods, stocked and ready for his morning routine. While Owen is at preschoool, I love hitting Martin’s to get some grocery shopping done without the kiddos. That really is a mom’s dream, right?
Before heading out to shop, I always make sure I have my coupons ready! I used to be one of those crazy couponers, but have gotten away from that through the years. This year one of my goals has been to work on getting back into using coupons and saving money on things we already buy. I was thrilled to find a digital coupon for Folgers® K-Cup® Pods that I could load right to my card. Talk about easy!
We’ve been using our Keurig since we cashed in on some of our gift cards after our wedding. Folgers helps millions of people start every day with the aroma and flavor of fresh-brewed, Mountain Grown® coffee. My husband is one of those people. Folgers® has been The Best Part of Wakin’ Up for more than 150 years and now we can have the same Folgers taste in a more convenient way.
Some of our favorite Folgers varieties are available in K-Cup® Pods: Folgers® Classic Roast® Coffee K-Cup® Pods, Folgers® 100% Colombian Coffee K-Cup® Pods, and Folgers® Morning Cafe® Coffee K-Cup® Pods. Tom’s go-to coffee in the morning is the light-bodied and bright Folgers Morning Cafe® Coffee.
Traditional coffee cake does not have coffee in it, but is meant to be enjoyed with coffee.
Of course, you can enjoy this coffee cake with your morning coffee or run away for a minute and enjoy it all by yourself in the middle of the day.
- 1 Tbsp butter
- 1 Tbsp sugar
- ¼ All-purpose baking mix
- ¼ tsp cinnamon
- ¼ tsp vanilla
- 1 Tbsp plain greek yogurt
- 1 Tbsp brown sugar
- ¼ tsp cinnamon
- 1 Tbsp butter (cold)
- 2 Tbsp flour
- Soften 1 Tbsp butter (just about 5 seconds) in mug.
- Add sugar and stir until well combined.
- Stir in vanilla, greek yogurt, baking mix, and cinnamon.
- Combine brown sugar, cinnamon, butter and flour until large clumps form.
- Sprinkle over cake batter.
- Cook in the microwave about 50 - 80 seconds until set. (Start at 50 seconds and increase in 10 second increments.)
I love coffee cake, but don’t need a full-size cake sitting around the house begging me to eat the whole thing. Being able to make a single serving is a huge win for (and my waistline)!
I know it’s not the prettiest recipe I’ve posted here, but I promise it’s delicious! Remember it is a coffee cake in a mug, baked in the microwave!

OMG! You really did not mention how delicious this is! Come on! This is the best I have had in recent times. I have long gone back to taking just coffee but this is really going to be a major change for me because I have already fallen for this cake!
