Double Chocolate Banana Oat Muffins

Fall officially started this week, which means school is in full swing and chillier mornings are upon us. For most, that means curling up with a hot cup of coffee. I have to admit, I’m not a coffee drinker, but I do love a good hot chocolate. They make a ton of flavored hot chocolates that I can pop in my single-serve coffee maker. My husband, Tom, he’s the coffee drinker around here.
Through the years I’ve bought several personalized mugs for Tom. They make great gifts that someone can really appreciate. I’ve never purchase one for myself though. Tom got me one when Owen was a baby or maybe just before Owen arrived (I would have to go check). Either way, it’s been quite awhile since I got a mug upgrade.
When Shutterfly offered to send me a personalized photo mug, I jumped at the opportunity to design my own! Shutterfly has a ton of amazing designs you can choose from including different colors inside the mug and on the handle. It’s the perfect amount of pop! I knew immediately I was going to get the pink for my mug’s inside and handle. For my mug design, I chose a simple filmstrip design and made my photos black and white. I love it!
And now for those yummy Double Chocolate Banana Oat Muffins!
- 1½ cups All-purpose flour
- 2 tsp Baking powder
- 1 tsp Baking soda
- ¼ cup Brown sugar
- 1 cup Chocolate chips
- ¼ cup Cocoa powder
- ½ tsp Salt
- ½ tsp Vanilla
- ¼ White sugar
- ⅓ cup Vegetable oil
- ¾ cup milk
- 1 egg
- 1 cup mashed banana (2-3 bananas)
- 1 cup quick oats
- Preheat oven to 350 F.
- In a large bowl, combine sugar, salt, oats, cocoa powder, chocolate chips, flour, baking soda, baking powder, and brown sugar.
- In a separate large bowl, combine vanilla, egg, milk, mashed banana, and vegetable oil.
- Add banana mixture to dry mixture and stir until well combined.
- Spoon batter into greased or lined muffin cups. Fill about ¾ full.
- Bake 20-25 minutes.
These are delicious and you’re going to want more than one!
Charlie’s pretty sure these are chocolate cupcakes and I’m certainly not going to argue with him over that.
Now, after I take Charlie to the bus stop in the morning, I can come back home and enjoy a little treat for myself (and probably share with Owen). And a cup of whatever I want in this beautiful mug. I mean, who wouldn’t want a mug with these cuties on it?
