I live in a house of boys. People always talk about boys eating you out of house and home, but I never imagined it would start this early. Both of these boys have bottomless pits for stomachs, so we’re pretty much snacking all day around here. I need to be able to feed them snacks that they’ll eat and need it to last as long as possible in their belly.

In our house, you’ll always find certain things in the pantry or fridge. For instance, RITZ® crackers of some flavor or another are always on the shelf. I’m a sucker for the RITZ® Bits Cheese, but they don’t work for topping quite like a regular size cracker does. On a side note, have you tried the Bacon? It’s delicious! Anyway, for our snack today we’re sharing our Mac & Cheese RITZ® Bites. Mac & Cheese is another of those items you’ll always find in our fridge as a leftover or a box in the pantry ready to make. I love a quick meal and mac & cheese always seems to be a people pleaser.We threw together this perfect bite with things everyone probably has on-hand (or should)! It’s perfect for a party appetizer or a quick lunch.

Mac & Cheese RITZ® Bites

Recipe type: Appetizer

Serves: 24 crackers

Ingredients

• 24 RITZ® Crackers (regular size, any flavor)
• 2 cups Mac & Cheese (whatever your favorite is)
• 4 Roma Tomatoes
• Bacon Bits (the real bacon kind)

Instructions

1. Make your mac & cheese or grab your leftovers from the fridge.
2. Slice tomatoes thin and put on top of crackers.
3. Put a small scoop (about 4-8 shells) on top of tomato.
4. Sprinkle bacon bits on top of mac & cheese.
5. Enjoy!

I will warn you: these don’t last long! Owen kept sneaking back over to the table to grab another. Apparently he thought we wouldn’t notice that he ate 4 (or 8, I’m really not sure at this point).
