Let’s face it, as a mom we sometimes forget to eat. I know… it seems odd that we feed food to little people all day, but we forget to feed ourselves. You know the drill: feed the kids breakfast, start making yours, someone spills something, clean it up, get them a replacement, sit down, put the breakfast dishes away, realize you didn’t eat. Lunch is the same way. When Mommy doesn’t eat, I’m sure my preschooler, Charlie, will tell you I turn into a monster aka Mommy Monster.
Moms need to eat, too! I know grabbing a SNICKERS® can certainly help prevent the Mommy Monster from coming out, but I like to change it up a bit and make that SNICKERS into something even more snackworthy for when Mom forgets to feed herself!
Even though I don’t always eat a real meal at mealtimes, I need something to keep the hungry mommy monster away. These SNICKERS Cake Mix Cookie Bars are perfect for a snack that’s filling, sweet and super yummy. Add a glass of milk and you’ve really got something.
To make the SNICKERS Cake Mix Cookie Bars, you can enlist the help of your mini-monsters like I did. It makes me seem less grumpy when they get to help Mommy. Charlie can easily dump everything in the big mixing bowl for me after I have it already portioned out. You can grab the printable recipe below.
You can enter the SNICKERS® “Who are you when you’re hungry?” contest by uploading a personal photo or video from your Computer, Facebook, Instagram or use the SNICKERS® Meme Generator to create something new! Voting begins at Noon on 5/11/15 and ends at 11:59:59AM ET on 7/15/15.
- 1 box cake mix (we used fudge swirl)
- 1 small box instant white chocolate pudding
- ⅓ cup water
- 1 cup applesauce
- 2 eggs
- 2 King Size SNICKERS Peanut Butter Squares (chopped)
- 3 King Size SNICKERS Extreme (sliced)
- Preheat oven to 350 degrees.
- Combine all ingredients in a large bowl except SNICKERS Extreme.
- Pour about ⅔ of batter into greased 10x13 baking dish or brownie pan.
- Lay out sliced SNICKERS Extreme to cover the batter.
- Pour remaining batter on top and spread to mostly cover the SNICKERS.
- Bake about 25 minutes.
- Should be slightly springy when touched.

By the way, I’m sure these won’t last very long in your house. They didn’t in mine. The really great part? You can take one with you wrapped in a napkin and the kids won’t hear you opening a wrapper. They really do hear that every time, don’t they?
