We eat a lot of cereal in our house. We eat it in the morning in a bowl of milk, in the afternoon as a dry snack, and sometimes at night with milk again as a sweet treat. Those are what I consider the normal ways people eat cereal. Every now and then though, I get crazy and whip up something different using cereal as an ingredient, like our Cereal Banana Muffins.
Today’s recipe is a yummy one you’re going to want to add to your list! Chances are, you already have most of the ingredients you need.
Adding cereal to a muffin recipe may sound out of the norm to most, but I remember one of my roommates in college did it all the time. She would make a batch each Sunday to get her through the week. When you use better-for-you cereal options, it’s a great way to enjoy a sweet treat, while still getting in some of those important things like healthy grains.
I picked up Great Grains Blueberry Morning at Walmart and thought it would make a great addition to our muffins because it’s full of delicious, whole-grain clusters, real fruit and crunchy nuts! It’s the perfect amount of natural sweetness. Trust me, I ate some straight out of the box, too.
There are actually five flavorful varieties of Great Grains: Raisins, Dates & Pecans, Cranberry Almond Crunch, Crunchy Pecans, Banana Nut Crunch and Blueberry Morning.
These Cereal Banana Muffins make a great breakfast, but are also perfect for an afternoon snack, or even a late-night treat. I love how much the blueberries puffed up in the muffins while baking. Yum!
- 1 cup brown sugar
- ½ cup butter at room temp
- 1 egg
- 2 ripe bananas, mashed (about 1 cup)
- 1½ cups flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup Post Great Grains Blueberry Morning cereal
- Preheat oven to 375 F.
- Using a mixer, Beat butter and brown sugar until creamy.
- Add egg and bananas.
- Mix flour, baking soda, and salt together in a separate bowl and add to banana mixture.
- Slightly crush cereal and add into the batter, stirring until just combined.
- Pour batter into greased muffin pans.
- Bake at 375 F for 20 minutes.
