Chicks in a Blanket with Apricot Sauce

Today’s recipe is a yummy dinner dish that the kids will enjoy because it’s a twist on an old favorite! Our Chicks in a Blanket with Apricot Sauce will be a new hit in your house!

Of course, you can also serve these Chicks in a Blanket for a party! How about a football party?!? There is that Big Game coming up soon…

I love that the kids can really help with this easy recipe. They can help mix the apricot sauce and spread the sauce. What Charlie really loves helping with though? Rolling them up! They’re not as tight when he does it, but they still taste amazing and he’s super proud of himself!

Recipe type: dinner
Ingredients
  • ½ cup apricot preserves
  • ¼ cup honey
  • 3 tablespoons of mustard
  • ¼ teaspoon of white vinegar
  • ½ cup of mozzarella cheese
  • 1 box of pastry dough (pie dough)
  • 8 chicken sausage links, fully cooked
Instructions
  1. Preheat oven to 375 degrees.
  2. In a bowl mix together the apricot, honey, mustard and vinegar.
  3. Take the pastry dough and gently roll it out. Cut into 8 even pieces. (4 per roll, box should have 2 pie rolls.)
  4. Spoon on 2 tablespoons of sauce mixture, gently spread it on a piece of pastry.
  5. Cut a lengthwise line in sausages and fill with two teaspoons of cheese.
  6. Place one sausage over the dough and jelly mixture, fold dough over, like a crescent.
  7. Gently brush extra sauce over each chick in a blanket.
  8. Place sausages on baking pan. Bake for 17-20 minutes until dough is golden.
