Easy Lunch: Leftover Quesadillas

We’re all about the quick and easy here. Anything to help make my day a little better is always a plus in my book. When it comes to feeding the kids, I like making things that they’ll eat and actually enjoy, but I’m not the type of mom to go out of my way to make a meal especially for them. When you cater to your child, you’re not helping them. My boys eat what is served to them, even if sometimes they just try a little of a certain food.
On busy mornings, we like to keep breakfast really simple with cereal, eggs or frozen breakfasts! I actually have a post going up soon with a bunch of freezer-friendly breakfast ideas, so keep an eye out!

One of the “tricks” I use with Charlie is being able to throw everything into a tortilla. Charlie has a love for what he calls “cheese-a-dillas”, so I totally take advantage of that!
We frequently have what I like to call Leftover Quesadillas for lunch. It’s something new, but using up previous dinner meals that are just sitting in the refrigerator. The awesome part about these is that it changes every time and it helps clean out the fridge.
To start making your Leftover Quesadillas, peek in the fridge and see what you have! I’m sure you have at least one meat and one vegetable in there! Grab your cheese and flour tortillas (we always have both on hand)! If you have a starch like macaroni and cheese, rice, or potatoes, they’ll work great, too! Just cut everything up into small pieces.
Now that you have your ingredients, all you need to do is heat your skillet on medium-high with a touch of oil or just use a cooking spray. Toss a flour tortilla in the pan. Add in your cheese, any fillings you found in the fridge and top with another tortilla. After 2-3 minutes, flip with a spatula and cook another 2-3 minutes. Use a pizza cutter to make cutting your quesadilla even easier!
Some of our favorite combinations have been grilled chicken and broccoli, shredded beef and creamed corn, and ham and macaroni and cheese. Seriously though, whatever you find in the fridge combined with cheese will probably come out awesome! The one you see pictured above is cheese with noodles, corn and pepperoni.

Oh I love to make Salsa rollups! The night before…I mix salsa, cream cheese, and shredded cheese and put a thin layer on tortillas. I roll them up and refrigerate over night. So yummy!
