Realistic Resolutions with Gorton’s Seafood & SparkPeople

We’re a month into the New Year. Did you set resolutions for this year? If you did, how are they going? I’m not one to sit down and set actual resolutions. I know a lot of people do, but then again, I know a lot of people “fail” at them two weeks later. I don’t think it’s really possible to fail at your resolution just a few weeks in. I think you have the whole year to really make it or not. Anyway…

Gorton’s Seafood has paired up with SparkPeople, the largest healthy living community on the web, to develop a 30-Day Realistic Resolution Challenge! Participants will receive tips, recipe ideas and daily motivation to support health and nutrition goals.

As we’ve discussed before, I’m not a big fish person. I decided to try the Grilled Salmon for lunch. I whipped up a side to go with it that is a perfect addition.

Corn, Cucumber and Tomato Salad

Corn Cucumber Tomato Salad

Ingredients:

  • 1 can crisp corn
  • 1 large cucumber
  • pint of grape tomatoes
  • 1 Tbsp. olive oil
  • 1 tsp. Pampered Chef Southwestern Seasoning Mix

Directions:

  1. Open can of corn, drain and empty into large bowl.
  2. Peel cucumber and dice into small pieces. Add to bowl.
  3. Slice tomatoes in half and add to bowl.
  4. In a separate bowl combine seasoning and olive oil.
  5. Add dressing to large bowl and combine.
  6. Serve chilled.

The Grilled Salmon from Gorton’s Seafood was so easy to prepare. I just popped it in the oven for 15 minutes on a metal pan and it was done. One thing I’m not fond of is the white gooey stuff on top of the fish when it was done, but the packaging says that it’s just the fish’s protein coming to the top. So although it doesn’t look too appetizing with it there, it doesn’t bother the taste.

Here’s our yummy lunch that was light and tasted like summer on a plate!

    My resolution this year was to get back to the basics of weight loss and diet and so far I’m moving in the right direction with it even though this year is turning out to be a hectic one.

    That’s to get back to my regular workouts.

    I did set one- just to be overall healthier. It is going ok. My kids and I are exercising most nights together.

    Yes, my New Year’s resolution is to volunteer more of my time at my daughter’s school and our church because I want to give something back to my community.

    this looks so healthy and yummy! one of my goals for this year was to attempt to tackle 52 things i’ve always wanted to do. .. one a week! i’ve definitely accomplished some things but this month i fell behind a bit. i’m looking forward to getting back on track and mostly actually doing at least some of these things i’ve always wanted to try!
