Who's ready for that big football game that's coming up? Did your team make it to the playoffs? Our team never had a chance this year, but that doesn't stop us from watching the Big Game!
Not only do I love plopping on the couch after church on Sundays to watch the game, but I love all of the awesome food that comes with football season! Today I'm sharing an awesome recipe that was shared with me by my friends at Pepsi.
These Slow Cooker Pepsi Ribs are delicious. I love being able to toss dinner in the slow cooker and not have to worry about it for several hours, which is perfect for us on Sundays. I can put it in before we head out for church and it's ready by game time.
- 3 lbs pork loin back ribs
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup Pepsi®
- 1 cup barbecue sauce
- ½ teaspoon dried thyme leaves
- Spray 4-quart slow cooker with non-stick cooking spray. Cut ribs into 2 or 3 rib portions and place in slow cooker. Sprinkle ribs with salt and pepper and pour Pepsi® over.
- Cover and cook on low for 6-8 hours (until ribs are tender, at least 170ºF)
- Drain and discard liquid from slow cooker. Add barbecue sauce and thyme into slow cooker on top of drained ribs and mix so the ribs are coated.
- Cover and cook on low for 30 minutes to 1 hour until ribs are glazed.
- Serve immediately.
We picked up everything we needed at ACME to have a great Game Day meal! The pork back ribs were buy one, get one free and we love ACME's meat selection, so we made sure to stock up.
I grabbed fresh rolls from the bakery and a yummy potato salad from the deli. We picked up the Steakhouse Potato Salad and it's amazing – cheese, bacon, potatoes – what's not to love? Both paired perfectly with our Slow Cooker Pepsi Ribs and didn't require any extra effort on my part.

These Slow Cooker Pepsi Ribs will definitely be added to our regular rotation of slow cooker meals! They came off the bone clean, some even falling right off. The pork stayed tender and moist, just as it should be. All ribs should be this finger-lickin' good!
