Looks delicious, right? There's nothing like sitting down to a family breakfast, especially around the holidays. That doesn't mean that your holiday breakfast or brunch has to be super fancy though. The holidays are all about spending time with those we love, not spending time in the kitchen!
With kids in the house, or even without, it's a nice idea to make breakfast a little more fun! To kick our holiday into gear, I made super yummy gingerbread pancakes. To add that special amount of fun in, I made those gingerbread pancakes into Gingerbread Man Pancakes!
We are definitely not perfect here and I like showing that. My initial idea on making these into a gingerbread man shape was to use my gingerbread man cookie cutter right on my griddle pan. That was not working out very well at all.
After getting super frustrated trying to get my gingerbread men out of the cookie cutter before they burnt and trying to flip them, I decided that just wasn't worth my stress. Making holiday breakfasts should be fun, not stressful.
I decided the best way to whip up our gingerbread man pancakes was to make regular circle pancakes and then cut them with our gingerbread man cookie cutter after they were done!
I always have pancake mix in the pantry, but maybe you don't. If not, run to Walmart now and grab some Aunt Jemima Original Complete Mix and Aunt Jemima Original Syrup!
Being creative with food at home does not have to be complicated. I used a box mix and just jazzed it up a bit to get that gingerbread flavor! A simple cookie cutter makes the whole thing come together!
- 2 cups Aunt Jemima Original Complete Mix
- 2 teaspoons ground ginger
- 2 teaspoons cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon nutmeg
- ⅓ cup molasses
- 1¼ cup water
- Preheat griddle or electric skillet to medium.
- Whisk together dry ingredients.
- Add molasses and water and stir until just combined.
- Pour about ⅓ cup of batter onto hot griddle.
- When bubbling, flip pancakes.
- Use cookie cutter to make gingerbread man shape (optional).
So, whether you're making a big holiday breakfast for the whole gang or just a small breakfast for your kids, these Gingerbread Man Pancakes will definitely be a hit!
