Foil Packet Fajitas

I know I’ve mentioned it before, but my husband grew up on a Scout camp. While I didn’t grow up AT camp, I did quite a bit of camping over the years. In our house of boys with my in-laws still living at camp, camping adventures were a sure thing!
On Memorial Day weekend last year, we joined family for an overnight camping trip with our combined families. And those crazy people invited us to join them again this year. The weather last weekend was crap and it rained the whole time we were building our fire and cooking, but we made the best of it and had a great time.
When camping, we split the meals up by family. The other family picked breakfast, leaving us dinner. I thought about it for a few minutes and decided we would do Foil Packet Fajitas! Seriously, how fun does that sound?
Before we left for our camping trip, I prepped everything for the Foil Packet Fajitas.
I packed everything up in our ! Honestly, it was perfect! I was able to separate everything out and stack the containers in the cooler. If you’ve been camping, you know how important it is to go with as little as possible. Thanks to having everything prepped and in our Rubbermaid BRILLIANCE containers, I didn’t have to worry about packing knives and cutting boards, salsa and sour cream containers, and all that extra plastic wrapped packaging.
We all know the scouts are all about being prepared and let me tell you, this mama was pretty prepared.
Tom was helping me get everything ready to throw in the cooler. You guys should have seen his face when I told him to dump the salsa and sour cream into the small containers. Seriously, no leaks!

Once the fire was built and we were ready to get our foil packet fajitas on, everything was a breeze to set-up! I just grabbed the prepped containers from the cooler and set up a make-your-own fajita bar!
This is definitely a plus when camping with a variety of people, kids included. Everyone was able to create their own foil packet with exactly what they want on their fajita.
- steak (we use sirloin), sliced in thin strips
- chicken, sliced in thin strips
- bell peppers, sliced in thin strips
- red onion, sliced
- fajita seasoning
- cooking spray
- tortilla shells
- shredded cheese
- salsa
- sour cream
- guacamole
- Spray aluminum foil with cooking spray.
- Place desired amounts of chicken, steak, peppers and onions in center of aluminum foil.
- Top with about a teaspoon of fajita seasoning.
- Wrap up your foil packet, making sure all of the edges are sealed.
- Cook on a grate over the fire for about 7 - 10 minutes, flipping after about 5 minutes.
- Make sure your chicken is done through.
- Prep your shell with all of your toppings and dump your foil packet on top!
- Enjoy!
