Creamy Italian Zucchini Noodles

It’s the end of September and we’re now a few weeks into soccer season. When signing the boys up this year, I contemplated moving Owen up to the U7 team that Charlie is on even though he’s not quite 4 yet. Honestly, it would make my life a thousand times easier on those busy Saturday mornings. I did the right thing by my boys and kept Owen on the U5 team, where he will fit in more and be coached on the level he is actually on.

What this means for my Saturdays is that I’m pretty much busy from 8am until 3pm. Sometimes the boys have back to back games and sometimes there are a few hours between the games. We live about 15 minutes away from the field, which isn’t too bad, but running back and forth between the games is less than ideal.

Oh, and did I mention Charlie has practices on Tuesday nights?

While my boys are not picky, they do have favorites!

One thing that always assures they’re both members of the Clean Plate Club is pizza! In our house, the frozen pizza of choice is Red Baron® Brick Oven Cheese Trio pizza. I’ve been the mom whose kid refuses to stay on the soccer field and the mom who has the kid that refuses to get off the field.

As moms, we’re all just trying to keep it together and do what’s best for our families.

I’m always trying out new sides to go with our favorite pizza. Something new we tried this week was this super easy Creamy Italian Zucchini Noodles dish. It’s the perfect amount of cheesy goodness and there’s no real noodles involved, just zucchini!


Creamy Italian Zucchini Noodles

Ingredients
  • 1 Tbsp butter
  • 1½ tsp garlic, minced
  • 4 oz cream cheese
  • 3 Tbsp milk
  • ⅓ cup Italian blend shredded cheese
  • 4 or 5 medium zucchini, spiralized
  • salt & pepper to taste
Instructions
  1. Melt butter in a large pan over medium low heat.
  2. Add minced garlic and allow to cook together 1-2 minutes.
  3. Add cream cheese and milk.
  4. Stir melted cream cheese to form a simple sauce.
  5. Add zucchini noodles to pan and toss to coat.
  6. Stir in Italian cheeses and cook about 5 minutes, until noodles are fork tender and cheese has melted.
  7. Serve hot.
